Juan has been with Between the Bread for over 20 years. A true culinary talent, he oversees all retail menu creation and design for our fresh-casual eateries, as well as for social events. He started his career as a butcher down in Mexico City before coming to New York, where he advanced his talents under Chef X at the venerable NY institution The Odeon, as well as Gotham Bar & Grill.
