What’s in Season: Winter Squash

We are featuring Winter Squash throughout our December eateries menu! There is a large variety included in the Winter Squash family, but we are focusing on Acorn Squash, Pumpkin and Butternut Squash (one cup of baked Butternut Squash features high amounts of Vitamins A, B6, C, E, Magnesium, Potassium, and Manganese. These vegetables are naturally low in fat and calories. They provide significant nutritional benefits and a great pop of color to dishes in the winter.
Look out for our Acorn Squash Bisque, Butternut Squash Mac & Cheese, Penne Pumpkin Pasta, Quinoa with Brussels Sprouts & Butternut Squash and Pumpkin with Ricotta & Pomegranate! All delicious winter eats that will leave you feeling full and happy.
